Mais ce c\u00e9page, est il juste bon \u00e0 faire ce vin de plaisir, ce vin de primeur consomm\u00e9 le 3\u00e8me jeudi de novembre ?&nbsp;<\/p>\n\n\n\n<p>Certes non, les 10 Crus du Beaujolais dont le Moulin \u00e0 Vent et le Morgon t\u00e9moignent de sa remarquable aptitude \u00e0 vieillir et \u00e0 donner des nectars dignes de ses nobles voisins de Bourgogne&nbsp;: affaire de terroir, de vignes et de talent humain&nbsp;! <\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Histoire&nbsp;<\/strong>du Gamay noir \u00e0 jus blanc <\/h2>\n\n\n\n<p>Le duc de Bourgogne, Philippe Le Hardi d\u00e9s 1305 le fait arracher par d\u00e9cret.<br>Il indique que ce \u00ab&nbsp;<em>tresmauvaiz et tresdeloyaul plant nommez Gaamez, duquel mauvais plant vient tresgrant habondance de vin et lequel vin de gaamez est de tel nature qu\u2019il est moult nuysible \u00e0 creature humaine (\u2026).&nbsp;\u00bb <\/em><br>Rien que \u00e7a&nbsp;!<em>&nbsp;<\/em>Et pourtant le Gamay a \u00e9t\u00e9 l\u2019un des c\u00e9pages les plus cultiv\u00e9s du vignoble fran\u00e7ais jusqu\u2019\u00e0 la fin du XIX<sup>e<\/sup>&nbsp;si\u00e8cle.Et si il est le Seigneur des vins du Beaujolais il est \u00e9galement le Prince des vins d&rsquo;Auvergne.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Homonymie &#8211; Synonymie<\/h2>\n\n\n\n<p>Il est affubl\u00e9 de diff\u00e9rents vocables :  Gamet, gaamez, gam\u00e9. <br>C\u2019est en 1896, qu\u2019au congr\u00e8s d\u2019amp\u00e9lographique de Ch\u00e2lons-sur-Sa\u00f4ne on \u00e9tablit son orthographe actuelle.&nbsp;<br>D&rsquo;autre part il existe plus d\u2019une trentaine de \u00ab&nbsp;faux&nbsp;\u00bb gamays, comme le gamay blanc. <br>Ce nom est donn\u00e9 parfois au Chenin, au melon de Bourgogne, au chasselas ou au Mauzac&nbsp;!<\/p>\n\n\n\n<p><strong>Pour m\u00e9moire 4 autres gamays<\/strong> existent&nbsp;pour la production de vins rouges : <br>3 Gamay teinturiers&nbsp;servaient \u00e0 enrichir en couleur les vins : <strong>Gamay de Bouze<\/strong> (C\u00f4te-d\u2019Or), <strong>Gamay de Chaudenay<\/strong> (Sa\u00f4ne-et-Loire) <strong>Gamay Fr\u00e9aux <\/strong>(C\u00f4te chalonnaise). <br>Le <strong>Gamay Saint Romain<\/strong> est un c\u00e9page end\u00e9mique des vignobles de Loire volcaniques. On le retrouve dans les AOP C\u00f4tes du Forez et AOP C\u00f4te Roannaise.&nbsp;<br><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Origine<\/strong>&nbsp;du Gamay noir \u00e0 jus blanc <\/h2>\n\n\n\n<p>Un village \u00e9ponyme en C\u00f4te de Beaune, pr\u00e8s de Puligny-Montrachet, porte ce nom. <br>Son origine serait av\u00e9r\u00e9e \u00eatre la Bourgogne. Il serait n\u00e9 de l\u2019hybridation du Pinot Noir et du Gouais, un vieux c\u00e9page r\u00e9pandu au Moyen \u00c2ge, disparu aujourd\u2019hui. <br>Mais Il est impossible de certifier avec pr\u00e9cision sa provenance.&nbsp; Les romains l\u2019ont ils apport\u00e9 d\u2019Italie, est il autochtone&nbsp;? <\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Terroirs&nbsp;de pr\u00e9dilection<\/strong> <\/h2>\n\n\n\n<p><a href=\"https:\/\/vinissime.fr\/blog\/ces-roches-volcaniques-qui-font-eruption-dans-nos-verres\/\">Les roches et sols <\/a><a href=\"https:\/\/vinissime.fr\/blog\/ces-roches-volcaniques-qui-font-eruption-dans-nos-verres\/\" target=\"_blank\" rel=\"noreferrer noopener\">magmatiques<\/a> (volcaniques ou plutoniques), conviennent tr\u00e8s bien au Gamay.<br>Les roches m\u00e9tamorphiques (Granit, schistes) lui permettent de d\u00e9gager de belles expressions aromatiques et min\u00e9rales. <br>Enfin, il s&rsquo;exprime avec plus d&rsquo;opulence sur des sols argilo-calcaires. C&rsquo;est le cas dans certains vins d&rsquo;Auvergne.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Caract\u00e9ristiques<\/strong>&nbsp;<\/h2>\n\n\n\n<p>Le Gamay \u00ab&nbsp;noir \u00e0 jus blanc \u00bb pour le diff\u00e9rencier des autres vari\u00e9t\u00e9s de Gamay teinturiers (comme le Gamay de Bouze) notamment, est un c\u00e9page assez fertile. <br>Ses grappes sont de taille moyenne et assez compactes.<br>Ses grains l\u00e9g\u00e8rement ovo\u00efdes, en m\u00fbrissant, prennent une couleur bleut\u00e9e, tirant sur le noir. <br>Le jus du Gamay est incolore (d&rsquo;o\u00f9 le qualificatif qui l&rsquo;accompagne \u00ab\u00a0\u00e0 jus blanc\u00a0\u00bb, comme celui du Pinot Noir ou du Pinot Meunier. <br>Contrairement \u00e0 ces deux derniers, on ne peut pas \u00e9laborer un vin blanc en pressurant ses raisins, qui teintent instantan\u00e9ment le jus. <br>Son qualificatif&nbsp;\u00ab&nbsp;\u00e0 jus blanc&nbsp;\u00bb est donc \u00e0 prendre avec des pincettes&nbsp;!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Styles de vins<\/strong><\/h2>\n\n\n\n<p>Le gamay donne des vins rouges fruit\u00e9s, d\u2019un rouge rubis \u00e9clatant, gouleyants sur des terroirs volcaniques. <br>Par contre, sur des terroirs argilo-calcaires il donne des vins plus \u00e9pic\u00e9s et tanniques . <br>Enfin, en assemblage avec le cabernet franc et le C\u00f4t (Malbec) dans les vins de Touraine, il apporte fruit\u00e9, l\u00e9g\u00e8ret\u00e9 et souplesse.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Implantation&nbsp;du Gamay noir \u00e0 jus blanc <\/strong><\/h2>\n\n\n\n<p>Ses r\u00e9gions de pr\u00e9dilection sont les terroirs volcaniques du Beaujolais, de l\u2019Auvergne et m\u00eame en Anjou sur les derni\u00e8res veines volcaniques des monts d\u2019Arr\u00e9e.\u00a0Mais on le retrouve \u00e9galement dans les <a href=\"https:\/\/vindesavoie.fr\/\" target=\"_blank\" rel=\"noreferrer noopener\">vignobles de Savoie<\/a>, du <a href=\"https:\/\/www.vignobles-sudouest.fr\/\" target=\"_blank\" rel=\"noreferrer noopener\">sud-ouest<\/a>, et de <a href=\"https:\/\/www.vintouraine.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Touraine<\/a>.<br>Egalement, il s\u2019est bien acclimat\u00e9 \u00e0 la Suisse (cantons de Gen\u00e8ve, du Valais et de Vaud).<br>On le retrouve m\u00eame dans la p\u00e9ninsule ib\u00e9rique, en l\u2019Europe centrale (Bulgarie, Roumaine) et jusque dans l\u2019h\u00e9misph\u00e8re sud (Australie).\u00a0<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>Chiffres<\/strong>&nbsp;: 37 000 ha de gamay sont plant\u00e9s dans le monde, dont 34 000 ha en France et&nbsp;<\/p>\n\n\n\n<p>22 500 ha rien que dans le Beaujolais.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>De Tokyo \u00e0 Los Angeles en passant par Londres et Paris, le Gamay noir \u00e0 jus blanc a fait conna\u00eetre le Beaujolais nouveau.
